The brown crab (Cancer Pagurus) that we supply is caught in the cold and clear waters off the North West coast of Scotland, in the small inlets and around the islands off this dramatic coastline. They consistently have the best quality meat that we have found from any other crab fished around the British Isles, with the white meat being sweet and plentiful and the brown meat being firm and full of flavour.
