The Canadian lobster’s (Homarus Americanus) natural habitat is the Western Atlantic, off the East coast of North America principally from Maine, Nova Scotia and Newfoundland. This is the largest lobster fishery in the world and is divided into districts with different seasons, which enables the fishermen to have good control over the stocks. They are very similar in appearance to the Scottish lobsters, although a dark green/brown colour when alive, they too turn red on cooking. The claw meat is very tender and the tail meat has a firmer texture and is just off white. Some chef’s think that this is the sweeter of the two lobsters available.
