Online Store » Lobsters » Cooked Scottish LobstersThe Scottish lobster (Homarus gammarus) also known as Native or European lobster is found throughout the Northern European coastline. Local fishermen bring their lobster catches to the Fishery, from around the East Anglian coast; we then grade the lobsters and store them in our newly installed state-of-the-art seawater tanks, before they are packed to order. These lobsters are dark blue when live, turning red on cooking and are deemed to be the ‘king of seafood’. The claw meat is very tender and sweet while the tail meat has a firmer texture and is pure white in colour.
